Hyacinth’s Ristas are pounded meat (not mince) that is formed into koftas and simmered in flavorful red gravy made of onions, chilli and saffron. The red hot gravy smears the mutton to make it a delight for mutton lovers imparting the beautiful red color to the Rista as a whole.
